This seems to contains the most recent information on HiDpi on Gnome:
https://fedoramagazine.org/improved-high-dpi-display-support-pipeline/

There are a couple of keys you could try playing with:
/org/gnome/desktop/interface/scaling-factor
/org/gnome/desktop/interface/text-scaling-factor

My display is 135dpi and I just increase all the fonts to 14 with TweakTool. The 'Scaling Factor' in the 'Fonts' tab changes the text-scaling-factor key.
