In the last few weeks I have completely abandoned GNOME desktop, as it seems to have lost the ability to recognize the application for opening a certain file. For instance, doubleclicking a .pdf document doesn't launch a Document Viewer or any application able to open the file, but rather gets wasted.

Nevertheless, there are updates to Nautilus (nightly) on daily basis, as well as to its components (Locale, Platform etc.) from the Software application.

Is there a possibility to regain the Nautilus functionality and stop the update-mania?

Did you look at the file permissions? And when you were trying to read that pdf, what were your file permissions. Are you the owner of that pdf file or in the same group as that pdf file.

What is not yours, you can't access unless the owner gives you privileges to do so.

You need to read up about file permissions and file ownerships.
