During a long time I've been thinking of crash dive in to docbook but I've always found something else to do :)

What "software" (this one has to ship with a GUI) should I use and what packages does it require?

... OH, and BTW ... any tips on links and books would be helpful :)

PS I've noticed that O'Reilly's DocBook: The Definitive Guide seem to be the only one to go for ... but there might be other books that covers this topic too ...

Conglomerate (http://www.conglomerate.org/) appears to have what you are looking for. (Haven't used it myself though) HTH

Here's some info on the Fedora Docs project that uses DocBook format:
http://fedora.redhat.com/participate/documentation-guide/

You may also want to visit the following sites to see how they use DocBook for their Documentation efforts:
www.tldp.org/LDP/LDP-Author-Guide
developer.gnome.org/projects/gdp/handbook/gdp-handbook
www.kde.org/documentation
www.freebsd.org/docproj

EDIT: Added ESR's HOWTO on the subject:

As for books, O'Reilly are well-respected sources.
