Where can I change the default file associations?

System > Preferences > Personal > Preferred Applications

You can only change some of them there. What if I want for example a different application to open .jpg and .png. I also don't have any application set to open certain file types like .css.

Check out these threads: http://fedoraforum.org/forum/search.php?searchid=6833353 All sorts of options there. BTW, a handy tool is (from the "Read This First" Forum) :

How to add fedora forums to your firefox search box.

A tip of the hat to Wayne for pointing out this little gem.

In order to add the fedora forum to your firefox search box, simply surf to this page, http://mycroft.mozdev.org/search-engines.html?name=fedora and click the fedora link. It will ask you if you really want to do this. Seems a little silly, but they had to ask. We didn't come this far just to back out now, so click "ok," and it will automatically add the fedora search to your browser.

I did search first, but the threads I've read didn't help me because I was expecting there would be a file with file association preferences if not an interface to do it.

I tried to do a similar thing as advised for GNOME - to right-click on the file, choose Other Application and there tick the "always use this". I don't have the "Always use this application" but I realised that the file association will be changed after using the "Open with Other Application" to the option picked there.

I'm ok with setting it that way but I thought there would be a one-stop-shop where I could see all the associations so I could set them all once and forget about it, so I'm not surprised later when opening a file type I haven't opened before.
