What is the command to make a directory and all of the subdirectories/folders have the same permissions? In particular I want the owner to have permission to do whatever they feel like, but everyone else to not have any access whatsoever. I imagine it is something like chmod -R ??? /this/folder/. Possibly: chmod -R 700 /this/folder/?

chmod -R u=rw,g=,o= /this/folder That should do the trick, if not then try:
chmod -R 700 /this/folder.

If I may...
With this command you will also change the file access on those directories too... If you just want to change the access on the directories only, then you could use something like this:
find . -name "*" -type d -exec chmod 700 {} \;
