Is ther an option to only allow important updates via yum? I don't want the newest version if it come out, because I have a server.

I suppose it would depend upon what you consider as "important" ?

If it is just security related, you might want to have a look at

$ yum info yum-security.noarch
Loaded plugins: refresh-packagekit
