A good prgram for plotting and graphing data contained in ASCII files? Also, a different program that will allow for editing files analagous to the Paint program in Windows?

Gimp for all your image editing needs.

What kind of data format? CSV can be read by many programs. OpenOffice.org Calc imports tabular text data and can do graphs like a good spreadsheet program.

Here's a sample file that I'll need to make a graph of. I'll want to start simple like taking two columns and graphing one vs. the other (in this case distance in angstroms vs. a probability related result).

There are three columns, the first being the distance (out to 5 angstroms) and I'd like to set it vs. either of the other two columns. I'd like to stay away from gnuplot because I can't get it to print or make a jpeg out of it; it also gives some bad data when I import stuff from Mac and try and plot it. I hear Grace is good, but I don't know how to make it work!

Never tried grace. OpenOffice.org Calc can readily import that as "csv". Just remember to check space as a delimiter when importing. Then you should be able to graph it.
