how do you make desktop shortcuts?

The GUI way is to click on the object you wish to use with the middle mouse button, drag it to the desktop and release the button and select 'Link Here'

Edit: If you drag something out of the Gnome menu with the left mouse button it will make a copy not a link.

Another method:

Find the item you want to make a link for, right click it, select "make link." Then drag the link you've created onto the desktop.
