Are there any automated scripts that I can use that would rip and encode? Also, which ripper and encoder do you recommend?

Graphical or command line?

Grip works pretty well as a graphical front-end.

On the CLI side, Rip works pretty well to convert a CD track to WAV. From WAV you then encode using either mp3encode or oggencode (encode filenames are from memory, so they may be incorrect).

I'm definitely a fan of Grip. Just be sure to disable paranoia for increased speeds.

Grip.

I ripped my entire collection onto my (new) HD using Grip to FLAC encode them. Worked really nice.
