If you mean the very first screen you see with the computer and the progress bar, that's Red Hat Graphical Boot, and you can't change that easily. But for others see http://www.gnome-look.org/ and other theme sites.

You can also change your grub bootloader splash (http://www.grahi.upc.es/santiago/?p=156).

Or if your looking about the graphical logon screen, just like Jman you can look there or at some places like deviantart.com or art.gnome.org or even gnome-look.org

So are there any particular constraints regarding the original jpg? Because I just can't get this one (http://img82.imageshack.us/img82/2640/summer1nb.jpg) to work.

That file converted as follows (all as root):

# cp summer.jpg /boot/grub/splashimage/
# cd /boot/grub/splashimage
# convert -size 1280x1024 summer.jpg -resize 640x480 -colors 14 summer.xpm
# gzip summer.xpm

Yet on the grub bootsplash it now shows a text grub.

EDIT: This is my 1st attempt so I haven't tried other jpgs
