Email server crashed...moving to new server

Hello all!
My FC3 email server just crashed; Motherboard is fried. So temporarily, I moved the hard drive to another computer and everything is working fine, but I don't want it to be a permanent fix, especially when I have an available server around.
On the FC3 server we're running:
-Postfix
-Dovecot
-Amavis
-SpamAssassin
-Webmin
-Apache
-Mambo Server
-Squirrel Mail
-Winbind

What I want to do is to take the server hard drive (ide40gb) and move it's contents to our other server which would be 5 SCSI 9.1 gb drives, and I would want to use a raid 5 array.

1. Am I able to create an image of the IDE 40gb hard drive and transfer it to the new server in a raid 5 array? or is that no feasible, because for some reason I don't think it is.

2. If I can't do that, then I would put FC3 or maybe FC4 on the new server and then transfer the important and necessary files from the old HD to the new raid 5 array on my 5 SCSIs. If I do that what type of methods should I follow? and is there a how-to or guide around about what files you need to transfer over and what configuring you need to do based on the programs I am running above?

Thanks for any help. It's greatly appreciated. I would figure it out myself, but I never used a forum and want to try it out on this problem.
