Is there a way to reinstall gnome from the CD's?
Even when some of the gnome packages have been upgraded?
Any way to do yum groupinstall gnome
but from the CD's?

i have never done this, but i will share my thoughts: the easiest way to do that, i believe, would to use the Add/Remove applications GUI interface (if you cant get into gnome you might could do it from kde). the reason i would use the gui interface is becuase there are a ton of dependencies for gnome and doing that manually from the command line, i would think, would be a whole new experience in frustration.
My attempt to run it:

The RPMS are on the CDs in /mnt/cdrom/Fedora/RPMS
you can attempt to install from rpms there
It might be best to do rpm -F [I think], package.
You might need to boot into KDE or Xwindows to uninstall GNOME, as you cannot remove it while running
