Splash Screen and Main Menu Icon in Gnome

I have been using Linux now for 2 weeks, and I enjoy it. I see that many people have done some customization to their desktops beyond themes. I was wondering if there was a way to change the Splash Screen the is shown on start up in Gnome. I also would like to change the Main Menu icon from the Barefoot to something else. I have searched the forum for this, and did not find any directions that made sense to me. Also, how do you apply the themes in Emerald. I have looked for an "Apply" button, but there is none. I will appreciate any help.
