USB Headset vs. Onboard Audio in F8

I have a generic Intel onboard sound card in my desktop. I also have a USB headset I use sometimes for gaming. If the headset is not plugged in when I boot up, sound support configures itself quite happily and I can then plug in the headset and use it with the apps I have told to do so. If the headset IS plugged in when I boot, it seems to become the default device and I can't get the computer to see the soundcard + speakers. I had the same issue on my previous computer under both F6 and F8.

Can anyone tell me how to force the sound system to configure the sound card output as the primary device, regardless of whether the headset is plugged in on boot or not?
