you mix up two things here.
there exists the rhgb (redhat graphical boot, which you mean) or the interactive startup (no graphics). to disable the graphic boot up (where you can see detailed all the services) edit grub.conf and remove the rhgb at the end...

my other question is, how do i cange the loginscreen to text only? and is there a command to go from text only to gnome desktop?

thanks

you can try setting the default init level to 3 (by default, the lv 3 is multi-user text terminal mode) in your /etc/inittab. To go from text to graphic use the command
Code:
init 5
as root. This will logout your session and enter level 5 (this does not re-start the daemon and system processes you see at booting, just the X window, login manager and desktop manager, etc.)
