Exclamation files want to open with java....

certain files such as spreadsheet files and archives seem to want to open with java instead of open office and archive manager, this happened to me on both fc6 and fedora 7. i tried changing the properties "open with" to the appropriate setting and still it changes back, even when root. but if i right click "open with" and select the program to open it it will, but i dont want to have to do it that way every time, any ideas?
