Basically, it doesn't. The DRM is supposed to stop the files being played in anything but approved MP3 players and their approved player.

Only if you strip out the DRM. Best alternative is to rip CDs and use DRM free sites like Emusic. And don't buy a DRM crippled player. Then at least you don't support the sale of DRM infected music.
Windows DRM and iTunes don't support Linux, so unless someone has made a player that specifically supports the required DRM, you might be out of luck. You could always track down the DRM removal tools and see if they work under WINE.
