Welcome to Linux and Fedora Core... I would like to say that if your Display Adaptor (ie- Video Card) only support 800x600 you will not want to go past that. If you were meaning that Linux only says the Display Adapter can handle 800x600 then follow the semi instructions below.
When trying to select your monitor and it is not in the list you have two options.
1 - Find a monitor in the list of any make/model that has the same specs as your monitor meaning Size, Hz Freq and Vert Freq and display size.
2 - There should be an option to enter a custom monitor in which you will need the above mentioned settings. You should be able to find those by doing some Google'ing around with your monitor's model #.
IF neither of these options work for you but you find the specs of the monitor you can always edit the Xorg config file and manually enter the numbers. You will find this file at '/etc/xorg.conf' and can use a editor as root to make these changes.
