Back2Zip type of program or method for Linux?...

I've used a really simple program in Windows for backup purposes called Back2Zip which simply watches the folder that I specify and every so often it backs up the contents to another folder\file in a .zip format if anything has changed.

Is there an app or process using the different zip commands that's similar for Linux?

I don't know of anything that uses zip. You could write a "cron job" to do this. Many heavy duty Linux/Unix environments set up a backup procedure called "snapshots".
