This guy has a great tutorial to get you started:
http://eddy.writelinux.com/

here are some references:
GTK+ reference:
http://docs.linux.cz/programming/gno...c/API/2.0/gtk/

Gnome reference:
http://library.n0i.net/linux-unix/ap.../libgnome.html

What programming language are you interested in ? C, C++, Python ? It seems Perl and PHP support Gtk+/Gnome bindings too...
Here's gtk.org tutorial, but it is mainly in C. Try googling for "gtk" + your_favorite_language and, with a bit of luck, you should find something useful (unless your favorite language isn't supported, that is)...
If you can, buy a good book

Which would you say is the most powerful but relatively easy at the same time?

Sorry, I shouldn't assume you want to program in C (It's just what I usually use)
you might be more interested in python and gtk+

Yeah, I guess code_astronomer's right... Python is probably easiest. Perl is more complicated and PHP/gtk+ is in its early stages. Anyway, C/C++ would be best if you are concened about performance, but harder...
