This is very true. Most people who care enough about their OS to join its forum know exactly what you can and can't change, but most users don't join their OS's forum and many of them either don't know or don't care that you can change anything more than the background.

Everybody I work with uses some kind of Linux and I am one of the very few who modify my desktop beyond the wallpaper (some even leave that).

If they think that, then they don't know anything about computers to begin with. Who doesn't know that you can change wallpapers/themes?

I never minded the brown. The plum is slowly growing on me (eww! get it off! get it off! )

I'm glad they didn't go with Blue, which is over-done, or Green, which the Mint users would accuse Canonical of copying them, yet stick with something not far off form mainstream.

The key is how the rest of the theme, and availalbe wallpapers, look together! Karmic has a nice selection of wallpapers to choose from. Probably the best collection I've seen so far.

As for Ubuntu's naming convention, how is that any different than Apple's Tiger, Leapord, Sabertooth, etc. pussycat names? Most people just call it OS X because they don't even know what version is the current one, let alone their release order, they are in (and don't provide a link because there's a link to Ubuntu's names and release times, etc. too).

People aren't happy unless they have something to complain about, right?

It wouldn't matter what color scheme they chose, people will complain. If they chose standard colors, people would accuse them of copying another distro, and if they do something radically different, they will say it's ugly. You just can't win, that's life.
