Grub2 Fedora 18 Grub Menu not show, error flashes on screen

I have two new Fedora Installations where I am seeing error in the Grub Menu and instead of seeing 3 Kernel Levels in a menu, I get to see a glimpse of an error message and the boot process moves on.


------- I am very sorry about the following --------
This error message is in a text box with white text on a black background. The "box" is thing bordered box with grey line. I then get another screen with a blue-reg-green mesh of colours with another text box and a blue progress bar

Then I see the Fedora splash boot screen hiding the boot messages - the one with a large rain drop that fills to indicate boot progress

1, I do not see my Kernel Options - this is very important if in a bind
2. I am getting the error message and this is not logged any where
3. I am getting the error message on both machines
a. Test machine, default build, little tweaking - Nouveau graphics
b. Main machine, tweaked a lot - Native Nvidia Drivers --> This machine

I have included an attachment of the running grub.cfg and the ENV variables /etc/default/grub

Suggest editing /etc/default/grub, finding the line

GRUB_THEME

And putting a # in front of it. You can optionally add a line:
LANG=C

Then save the file. Then run:

sudo grub2-mkconfig -o /boot/grub2/grub.cfg
Reboot and see if it's better. The above suppresses the error immediately after Welcome to GRUB but before the menu appears, and also suppresses the fancy theme which on some system is so dog slow that by the time it draws, the grub timeout has happened and boot commences.
