Ok, I've been playing with this for a while and I would like to thank everyone for their comments.
However I still have a problem with Rhythmbox in that it crashes everytime I start it, even with the gstreamer-plugins-extra-audio package installed from freshrpms (keep in note that I need x86_64 FC3 packages). Therefore I've given up on it and have turned to XMMS again.
I've been hunting for xmms-mp3 plugin to enable mp3 playback, but all the repos are either i386 or have nothing. I have followed most of cybrjackle's advise since he/she has a very similar setup to mine.
Any advise would be great, before I reach for the Mandrake CD's or head back to XP and iTunes.
Many Thanks,
Jez.

You have choosen search rpm in world FTP resources.
Not enought search parameters. I'm using defaults.
FILE WASN'T FOUND ON FTP SERVERS. TRYING TO SEARCH THIS FILE IN RPM FILES CONTENT.

Your search xmms-mp3-1.2.10-9.1.1.fc3.fr.x86_64.rpm did not match any entry in database.
If you didn't do it, try add to searched space more distributions and repositories.
Not yet compiled then? hmm.. any other resources?

Just use the FC2 xmms-mp3 plugin until one of the repositories can get it up. That works fine for me. Either temporarily add the repository to your list or just grab the rpm directly and use rpm to install it.

Ok I've managed to sort it out now. After hunting around I've managed to compile and build rpm's from the 1.2.10-9 xmms source rpm (which includes the mp3 plugin). It's all x86_64 so works really well.
I'll post them up somewhere if anyone is interested.
Kind Regards,
Jerry.

Your welcome,
For java, I use:
http://www.fedorafaq.org/custom_java.html
http://java.sun.com/j2se/1.5.0/download.jsp
I installed the JDK & JRE rpms' for 1.5.0 they have x86_64 rpms.
For flash, I use the binary from mozilla.org made for i686, just rpm -e firefox.
unpack the firefox installer too /usr/lib/firefox if you want to keep it "standard" create a symlink to /usr/bin
ln -s /usr/bin/firefox /usr/lib/firefox/firefox
and then you should be able to install the flash plugin without problems.
