I currently have a server running fedora core2 as a gameserver.
Is there a way that I can optimize the eth for better pingtimes as I dont need to have a great throughput? I'm using a builtin 3com nic on my asus a7n8x dlx motherboard.

The 3com NIC is fast ethernet, so it's probably going to depend on your internet connection and the other people's involved - and the number of people playing.
If you're on a high speed connection you'll still probably have a much lower upload speed than download - for example, I can download at 1Mbps but I can only upload at 256Kbps. So it's pretty much game dependent, on how much bandwidth it requires for each client.
This is all just my opinion, by the way : )

I have a 10mbps both up and down so I dont think the speed will be any problem. I was just wondering if maybe the way the nic transfer data could be optimized for better ping times. Maybe change the size of the packages or something?

Do you have a firewall on your network? In particular, do you have a Linux iptables firewall? If so, you *might* be able to optimise the rules to lower ping times.
