Hello,
Is there an open source email server that can provide basic Exchange services?
of course with GUI.

In the Netherlands is a company producing "zarafa", present in the Fedora repository. The community edition is free, but, if you want to have support, you have to pay, if you want to have more than 3 users with MS-Outlook connector (Windows binary) , you have to pay.
It offers POP/IMAP and Outlook webaccess-like web-interface with e-mail/calendar/address book.
Via IMAP/Webcal, you have mail and calendar in Evolution and Thunderbird/Lightning.
Additional software for mobile phone-ActiveSync is available.
Everything is stored in MySQL database, mail delivery to zarafa goes via PostFix or sendmail.
The program is announced as a real alternative for Exchange.
Alternative: setup a mailserver with e.g. Dovecot/Sendmail and install "horde"
This offers web-based mail, calendar, addressbook. Via IMAP and ical
the software can be used from e.g. evolution/thunderbird (or Outlook)
Both solutions require MySQL/Apache/PHP.

Doesn't Zimbra still have an opensource version?
If you mean just free, as opposed to opensource, there's also CommuniGate for 5 users or less.
