Kudzu after bootup

Let's say, for example, that I plug in a USB/FireWire device (iPod, stroage drive, who knows) AFTER fully booting up and into gnome. Is it possible for Kudzu to be called to pickup and evaluate the new device to add such things as fstab entries, etc.?

try as root run kudzu command.

AFAIK hotplugable usb device are managed by hotplug subsystem. I dont know if kudzu will solve your problem.
