Can I create a chart of the computer's internal temperature fluctuations over time?

gkrellm reads the temperature but doesn't chart or record them.

I'm alarmed at fluctuations of around 25 degrees Fahrenheit over just minutes when environmental temperature is steady. The internal fans don't always work and monitoring would be helpful.

Even more useful would be an ability to correlate with other events, such as usage of processor, I/O, HDD spinning, and other activities that would be likely to drive up processor demand and thus heat production. Main menu > System Tools > System Monitor collects some of that data in line chart form, but not temperature. Any other ways?

I don't think I've ever seen one that charts the output for you. You could check out the lm-sensors-sensord package which runs like a daemon and will report the values to syslog.

You could also look at the gkrellm website and see if someone built a custom temp sensor addon that displays graphically like some of the other gkrellm sections.
