I did a search and found nothing similar to my problem.
Basically, I installed the Nvidia drivers, connected a second monitor, set-up dual monitors how I wanted using the Nvidia GUI, applied the changes, saved the changes to xorg.conf using the Nvidia GUI and all is well, until I restart and only one display outputs anything (the other screen is "asleep").
Here is the xorg.conf that gets created by the Nvidia program.
