Why does your server go down ?? Does it have a power out and doesn't start back up again when the power is restored ?? (BIOS setting for that normally)
Does Apache become unresponsive but the rest of the services are still running (can you ssh into the server even though Apache has stopped ??
Answering why the server goes down will allow people here to help you fix the problem. Without more information you could just have a very unreliable PSU or a stick or RAM that isn't seated properly into the motherboard.

if Apache is still running but you don't have a valid network interface that would, in my mind, indicate a faulty network card. I would replace it and go from there.
